The FRYPAN has a high and low temperature alarm, which means you can set a temperature range in which you want the oil temperature to remain and be alerted if it exceeds these limits.

If the temperature drops more than you want, increase the heat. If it gets too high, reduce the heat. Try this trick with a breadcrumb.
