Peanut Butter Rice Balls

Ingredients

  • 1 cup (250 ml) of creamy (or crunchy) peanut butter
  • 1 cup (250 ml) of powdered sugar for a smooth sweetness
  • 2 tablespoons of melted butter to add richness
  • 1 1/2 cups (375 ml) of crushed crispy rice cereal (such as Rice Krispies) for that perfect crunch
  • 1 1/2 cups (375 ml) of chocolate chips for a luscious coating

Step-by-Step Instructions

  • Start by lining a baking tray with parchment paper to prevent sticking and ensure easy cleanup.
  • In a large mixing bowl, blend the peanut butter and melted butter until smooth and creamy, creating a base that's rich and velvety.
  • Slowly add the powdered sugar and crispy rice cereal, stirring until everything is evenly combined. You should have a thick, slightly sticky mixture.
  • Take spoonfuls of the mixture and roll them into small balls (about 2.5 cm in diameter), placing them on the prepared baking sheet. These bites will hold their shape beautifully once chilled.
  • Refrigerate the balls for at least 30 minutes to firm up, making them easier to handle and ensuring they stay together.
  • While the balls chill, melt the chocolate chips in the microwave in 30-second intervals, stirring each time to avoid burning. The result should be a smooth, glossy chocolate.
  • Using a toothpick, dip each ball into the melted chocolate, covering it completely for that perfect chocolatey finish. Place the dipped balls back on the baking tray.
  • Repeat the process for all the balls, and once you're finished, place them in the freezer for about 10-15 minutes to set the chocolate and give them a firm texture.

These little peanut butter and chocolate treats are perfect for the holidays or any special occasion... Whether you're treating your family, friends, or even Santa Claus, they’re sure to be a hit. Enjoy!
