Christmas Yule Log: A Classic Festive Dessert

The Christmas Yule Log is a must-have holiday dessert. With its light sponge cake, creamy filling, and festive decoration, it will delight your guests and add a magical touch to your Christmas dinner. Easy to customize, this delicious Yule log is the perfect way to end a festive meal beautifully.

 

Ingredients

Cake

  • 4 large eggs (whites and yolks separated)
  • 1/2 cup (125 ml) + 1/3 cup (85 ml) sugar (divided)
  • 1 teaspoon vanilla extract
  • 1/2 cup (125 ml) all-purpose flour
  • 1/4 cup (65 ml) cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • A pinch of salt
  • 1/3 cup (85 ml) strong coffee

Filling

  • 1 cup (250 ml) cold whipped cream
  • 1/2 teaspoon vanilla extract
  • 1/4 cup (65 ml) powdered sugar

Chocolate Bark

  • 1 cup + 3/4 cup (440 ml) dark chocolate (60%)
  • 1 tablespoon powdered sugar

 

Preparation

1. Preparing the Cake

  1. Preheat the oven to 350°F (180°C) and prepare a 15-inch baking sheet, lined with parchment paper.
  2. In a large bowl, beat the egg whites at high speed until stiff peaks form.
  3. Add 125 ml of sugar and continue beating until the peaks are firm.
  4. In another bowl, beat the egg yolks with vanilla extract and the remaining sugar for about 4 minutes, until the mixture thickens.
  5. Combine the flour, cocoa powder, baking powder, baking soda, and salt in a separate bowl.
  6. Gently fold this dry mixture into the egg yolk mixture, alternating with the strong coffee.
  7. Carefully fold in the beaten egg whites to keep the batter light.
  8. Pour the batter onto the prepared baking sheet and bake for about 15 minutes, or until the center springs back when lightly touched.
  9. Remove the cake from the oven, lift the parchment paper, and let it cool slightly.
  10. Dust with powdered sugar and roll the cake in a clean towel to help shape it.

2. Preparing the Chocolate Bark

  1. Melt 190 ml of dark chocolate, stirring constantly.
  2. Spread a thin layer of chocolate onto a parchment-lined surface and refrigerate until firm.

3. Preparing the Filling

  1. Whip the cream with vanilla extract until it thickens.
  2. Gradually add powdered sugar, continuing to whip until the mixture is smooth.

4. Assembling the Yule Log

  1. Unroll the cake and cut a 1-inch (2.5 cm) strip to create a small branch.
  2. Spread the whipped cream filling over both the main cake and the small branch, then roll them up.
  3. Trim one end of the small branch at an angle and attach it to the main log.
  4. Remove the chilled chocolate bark from the refrigerator and break it into pieces.
  5. Melt 250 ml of dark chocolate, using it as glue to attach the chocolate bark pieces to the cake with a pastry brush.
  6. Dust with powdered sugar to create a snow effect.
